I always test my sugar with water finger water and it never burns me. You just have to be quick.

With the sticking your finger in the caramel, this does actually work as if you use COLD water it staps the heat MOMENTARILY so you must be quick with it.

A coffee grinder does quick work of powering sugar. I do that when making shortbread.

I once got lava hot sugar on the end of my finger. Lord! It hurt and I put it under a tap and it turned solid.

I've boiled off almond skins since I was a child to make knäck, I usually steep it in hot water instead of directly boiling it though. ^^
