Muffin Base
2 cup ground oats
1/4 cup coconut sugar
1 teaspoon baking powder
1 teaspoon baking soda
Sea salt to taste
2 eggs
1/2 cup milk
1/2 cup melted butter or coconut oil
Western Muffins
1/2 cup diced deli ham
1/2 cup finely diced green pepper
1/4 cup minced red onion
1 cup shredded cheddar cheese
Mediterranean Muffins
1/2 cup chopped roasted red peppers
1/4 cup sliced Kalamata olives
1/2 cup crumbled feta cheese
1/4 cup chopped basil
1 tablespoon Greek seasoning
Very Berry Chia
1 cup mixed berries, fresh or frozen
1/4 cup maple syrup
2 tablespoons chia seeds
1 teaspoon vanilla extract
Preheat the oven to 350ºF. Line a 12 cup muffin tin with parchment liners.
In a large bowl, whisk together the ground oats, coconut sugar, baking powder, baking soda and salt. Set aside.
In another large bowl, whisk together the eggs, milk and melted butter. Mix the dry ingredients into the wet and fold in your desired toppings. Scoop the batter into the muffin tin and bake until a toothpick inserted comes out clean, about 20 to 25 minutes.

Gluten free oats are actually risky for coeliac disease patients to intake as they still have possibilities of getting cross contaminated. So can you please make another gluten free muffin recipe that doesn't use oats. Thank you

Coconut sugar is a nightmare to get in the UK, could I use honey instead as a sweetener?
I've been browsing the web for a healthy lemon bar/cake/breakfast/pie recipe and they are soooo hard to find. Or they integrate protein powders, or they have cauliflower in them?!! It would be awesome if you would come up with something 😀 I always love your recipes

I would omit maple syrup, for honey instead for the berry muffins. I just love honey. these look pretty good though. I may give the Mediterranean one a try. use greek yogurt with some lemon juice in it, to dip.

Maybe instead of replacing the butter with oil, you can substitute applesauce instead and make an apple cinnamon flavored muffin with healthy chocolate chips of course LOL
I made the base recipe today and added Reese peanut bitter chips ,cacao nibs and chia seeds with a splash of maple syrup. My kids loved them
