Day 5 of my Vegan Salads That Don’t Suck recipe series! Today’s healthy recipe is for my Eggplant Parmesan salad with vegan parmesan potato croutons and grilled eggplant slices. Recipe starts at exactly: 0:40. So easy and so good for you :)

Vegan Eggplant Parmesan Salad Recipe

sliced eggplant
low-sodium soy sauce
garlic powder (generously sprinkle)
Italian herb seasoning
salt + pepper

potatoes, cut into small chunks
dried rosemary
dried oregano
salt + pepper
olive oil (optional)
vegan parmesan cheese

mixed greens
Trader Joes Bruschetta, or any vegan variety
1 tbsp balsamic vinegar
1 tbsp water
salt + pepper

– It may be a bias of mine, but I prefer not to boil my potatoes, because of loss of nutrients. For me, baking is safer. If I were making a soup with potatoes, then I would just cook the potatoes directly in the pot.
– Organic Shoyu soy sauce reduced sodium from Whole Foods 365 Brand. Hmmm. . . I usually have non-organic soy sauce from an Asian supermarket. I think the main health concern is that non-organic soy sauce may be GMO. For me, life's a gamble. GMO foods at least do not cause immediate damage to the extent that I die. It's unclear what the effect really is by eating GMO foods. If I get a chronic illness from eating GMO foods, then I'll probably not be the only one. Society as a whole will collapse, and other animals will eat the dead human bodies. As for "reduced sodium", just add more filtered water to regular soy sauce.
– I like the idea of adding soy sauce to eggplant, though. Must try that next time.
– I find it easier to season potatoes more efficiently by adding various spices to a little bit of oil. Then, drop the potatoes (one handful at a time if I have a lot of potato chunks) into the bowl, and toss the potatoes with oil and spices, and transfer them to a baking pan. I've heard that oil is bad for you, and some people avoid oil. But what the heck? There are so many things in the world that can kill me, anyway. I may be alive one day and gone the next.

thank you for posting this, it looks amazing. I need to make it ASAP. I don't have a grill pan, do you think it would be okay if I just put the eggplant on a regular pan with some cooking spray?

I always cut and salt my eggplant at least 30 minutes ahead of time to pull out the bitterness. I do love eggplant too! I never would have thought to do a tomato based dressing like that. I am going to have to try it!
