Avocado Egg sandwich
Ingredients:
2 bread slices, whole grain
1 Hard-boiled egg
1/2 Avocado, small
1-2 teaspoons Lemon juice
Seasoning to taste (salt, pepper and paprika)
Chives
Directions:
1. In a bowl, mash avocado with lemon juice.
2. Chop boiled egg and add to mashed avocado. Add chives, seasoning and mix until combined.
3. Spread over the bread and serve.

Tuna sandwich
Ingredients:
2 bread slices, whole grain
1 Tuna can
2 tablespoons Low fat mayonnaise
1 teaspoon Mustard
Green onion
1/4 Red onion, chopped
1-2 Lettuce leaves
Seasoning to taste
Directions:
1. In a bowl mix all ingredients together.
2. Spread tuna mixture over the bread. Serve.

Caprese sandwich
Ingredients:
2 bread slices, whole grain
2oz (60 grams) Mozzarella cheese, low fat
2 slices Tomato
4-5 Basil leaves
2 teaspoons Olive oil
Seasoning to taste
Directions:
1. Lightly brush bread slices with olive oil and toast.
2. Place basil leaves as a first layer, then mozzarella cheese, then tomatoes. Serve.

Chicken and yogurt sandwich
Ingredients:
2 bread slices, whole grain
2oz (60g) Chicken breast, shredded
1/3 cup (80g) Plain yogurt
1 Small celery, chopped
3-4 Olives, chopped
6-8 Spinach leaves
Directions:
1. In a bowl mix all ingredients together.
2. Place spinach leaver over first slice of bread, spread chicken-yogurt mixture and top with second bread slice. Serve!

Scrambled eggs sandwich
Ingredients:
2 bread slices
2 eggs
2 teaspoons Olive oil
Arugula/Spinach leaves
10-15 grams Feta cheese
1/4 Onion, chopped
Directions:
1. In a medium sized pan heat 2 teaspoons of olive oil. Add chopped onion and sauté for 4-5 minutes.
2. In a small bowl beat eggs with salt and pepper. Pour the eggs and scramble them.
3. Place some leaves on the bread, place scrambled eggs over the leaves, crumble feta cheese and top the second bread slice. Serve!

Yogurt in a chicken salad sandwich, instead of mayo? I'm kinda scared. But it looks good. And the ONLY way I like spinach is raw. So, does the spinach and yogurt compliment each other? Is it sweet because of the yogurt? Im just curious. I don't think I have ever tried plain yogurt. Has anyone tried the chicken and yogurt salad sandwich, who might be able to give some sort of comparison?

I'm being serious. Not being sarcastic at all. I'm curious. But do not like to waste food. Especially during the pandemic. Not to mention, I've had to replace food, in couple of days will be the 2nd time in just a couple of months. First from being evacuated due to the Creek Fire in California. And this time because they shut our power down for a couple of days because of high winds.

Unfortunately PG&E pretty much has a monopoly on electricity in California. So there's no competition and they have decided that rather than hiring more crews to cut away dead trees from power lines, and running new lines and putting in power poles (most of our power lines here are just wrapped around trees) they'll just shut 1,000s of people's electricity down for days on end.

Sorry this curiosity has turned into a rant :/
