My favorite go-to-salad inspirations?

1.) Hot Bacon Drippings, crispy bacon pieces over well-rinsed spinach, Romaine and Iceberg lettuce

2.) Homemade Guacamole-stuffed Romaine lettuce "boats":
4 large ripe avocados
1/2 cup homemade mayo (*) or your favorite store-bought
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon lime juice (optional)
1 teaspoon hot sauce (Pico Pico, Tabasco, Chahula, etc.)
4 strips of crispy bacon (crunched up into bits)
1/4 teaspoon salt
1/2 teaspoon ground black pepper

Mash and mix everything in a large bowl; cover the guac directly (not just the bowl) with plastic wrap to prevent oxidation (browning), chill for at least 30 minutes and serve.

3.) Here's a tip: always make your dressing in a big bowl, THEN toss in your freshly rinsed and drained greens in the dressing.  You'll find you'll both use less and won't end up with a fat-sodden and wilting salad.

4.) I've found avocado an excellent addition to grilled meats that tend to be lean (lamb chops, hamburger patties or pork chops.)

I love making salmon salad with canned salmon, mayo, garlic salt and pepper. I eat it on slices of english cucumber. So yummy!

I found out the other day that most of the carbs in cucumbers are in the skin, so if you peel them you will get less carbs.
