Serves: 4-5
[Ingredients for Beans]
– 2 cups of boiled black beans
– ½ cup of pinto beans/kidney beans boiled & mashed
– 2-3 tbsp onions finely chopped
– 2 tbsp fresh jalapenos finely chopped
– 2-3 tbsp sour cream
– ½ tsp red chili powder and ½ tsp cumin powder
– ½ tsp salt or to taste
– 1 tsp taco seasoning
– 3-4 tbsp taco sauce

[Ingredients for Vegetable Mix]
– 3 tbsp of chopped tomatoes
– 2 tbsp of red bell pepper
– 3 tbsp of sweet corn
– 3 tbsp of onions, salt to taste
– 1-2 tbsp of fresh cilantro and half lime

[Ingredients for Avocado Sauce]
– 1 large ripe avocado
– 1 medium sized jalapeno
– 1 big clove of garlic
– 1/2 cup cilantro
– salt to taste
– 1-2 tbsp lime juice

[Nachos Assembly]
– tortilla chips or corn chips
– refried Beans
– veggie Mix/Salsa
– 1 cup Mexican cheese
– fresh or pickled jalapenos
– avocado sauce or guacamole
– sour cream
– fresh cilantro
