Broccoli Cheddar Soup Panera Copycat recipe!

Broccoli Cheddar Soup Ingredients:
1/2C Butter
1 diced onion
1 minced garlic clove
1/2C flour
4C chicken broth
24oz shredded cheese
1qrt half n half (or 2Cs milk + 2C Heavy cream)
3 grated carrots
1lb broccoli florets chopped
Salt/pepper to taste
Pinch (less than 1/8th tsp) cayenne

What About Nepal says:

I made this today with my Nepalese helper and it was very nice. I used fresh broccoli and I don't know why more people don't use the stalk of the broccoli. Just use a knife or potato peeler and take off the bark. Also, don't forget to chop up the leaves. They taste fine and have lots of vitamins. I'm in Nepal and western things can be very expensive, so I used yak cheese. It was still excellent. Thanks so much for the recipe. Yak cheese is the same consistency as cheddar, but not colored yellow.. I should have just added a bit of turmeric to the broth.

I work at a Panera in Missouri, ask for a side of bacon bits and put them in the chicken and wild rice and cheddar broc, wonderful but they won't let us do it at the stores

Found printed directions with your help. Made soup today got ahead of myself and had to mix the flour with the stock and stir in, cut carrots on wrong side of grater taste disappeared, but for me the soup was perfect and I promise to do better ext time! Thanks you so so much I love this soup and it is the first time I’ve tried to make it. Many thanks for a successful pot of lusciousness!

I used 16oz of cheese at it was perfect actually. Especially when reheating. The cheese makes the soup very creamy
