White Enchilada Sauce:
2 cups chicken stock
1/4 cup heavy cream
1 1/2 tsp chili powder
1/4 tsp salt
1/2 tsp black pepper
1/2 tsp xanthan gum

5 low carb spinach tortillas
22-24 ounces cooked chicken, shredded
8 ounces sour cream
1 – 4 ounce can mild green chilies, chopped
1/4 cup pickled jalapenos, chopped
1/4 cup chopped cilantro
1/2 tsp cumin
1 tsp garlic power
1 tsp onion powder
1/2 tsp salt
8 ounces finely grated Mexican blend cheese
6 slices pepper jack cheese
16-20 slices of pickled jalapenos
Oil for dish
Optional garnish: dried chives

Serves 8

Per Serving:
438 calories / 28.38g fat / 6.71g net carbs / 35.61g protein

Papa G, I've made creamy low-carb chicken enchiladas before that were great, but yours look out of this world! I wouldn't have thought of the pickled jalapeños, but that must really boost the flavor. This is so similar to a recipe I've made for years but with flour tortillas. My recipe also called for mixing cans of cream of mushroom, celery, and chicken together, thinning them down and mixing in finely chopped onion and jalapeño. That was the base to be poured over the tortillas and chicken and shredded nacho cheese(which I don't think is made anymore, so fiesta blend was substituted but the taste just wasn't the same). And the dish was layered like you have done. Definitely will give your wonderful version of this a try. Thank you sir.
