Made me think about the last one I did and I had to laugh. I cooked the back with the bird and I thought I had hidden it from my wife but she found it. Actually she ate more of it than I did. I made my own rub from scratch and put it under the skin and then poked holes into the meat. If I remember right I seasoned it with sea salt, black pepper, garlic, cinnamon, paprika, ginger, cumin, cayenne pepper, bell pepper. I put everything in a bowl and mix it before applying. Sometimes I'll even add turmeric to the mix.
