Looks so yummy! Does the salt fish dish save well? Can it be stored for a day or two?

Josephine Winter says:

now that looked delicious. I particularly like the first recipe, because, while not particularly original (the internet is the problem – nowadays you can get one million recipes in one second), it includes little details, such as fresh thyme and using two tomatoes to make the sauce but not too runny (or expensive) which make it very doable and accurate-sounding (as in, it'll turn out how it's supposed to accurate) and tasty and different enough yet very edible. That might be my next recipe!

OMG! This is soooo good. I made the curry and the roti today. I'm eating as we speak (trying not to get it on my computer). This is absolutely delicious. I tried all my local markets for plantain but to no avail. Even without that I'm in heaven. Thank you, thank you, thank you. Awesome recipes.

PS: I am so pigging out on this curry! I've eated two roti full. Please! Someone stop me. LMAO
