RECIPE 1: CAULIFLOWER, SPINACH & BUTTERBEAN CURRY

3 white onions
5 garlic cloves
2 inch ginger
1 tbsp. cumin
1 tsp. coriander seeds
1 tsp. ginger powder
1 tsp. curry powder
1 tsp. garam masala
4 dried curry leaves
400ml coconut milk
coconut oil
1 tbsp. tomato puree
black pepper
1 small cauliflower
handful fresh coriander

RECIPE 2: SWEDE, PEA & KALE SOUP

1 medium swede (rutabaga)
1.5 cups frozen peas
150g kale or spinach
3 white onions
5 garlic cloves
2 stalk celery
1 leek
400 ml coconut milk
1 tbsp. tamari
1 tbsp. dried oregano
1 tsp. dried thyme
1 tbsp. cumin powder
1 tsp. garlic powder
sea salt & black pepper
1 – 1.5 cups water (slowly add water until you reach your desired consistency)
coconut oil

RECIPE 3: STUFFED SWEET POTATO

Roasted chickpeas:
280g cooked chickpeas
sea salt & black pepper
4 tbsp. olive oil
1 tsp. oregano
1 tbsp. sage
1 tsp. thyme
1 tsp. paprika
cayenne (a touch)
1 tsp. garlic powder

Coconut, coriander dressing:
Coconut yogurt
100g fresh coriander
1.5 tbsp. lemon juice
1 garlic clove
2 tbsp. extra virgin olive oil
sea salt
black pepper

I made the green soup and I was delicious!😋 I have a ninja and I still had a hard time getting soup to 100% smooth. It had a little texture. I'll just keep practicing. But so good. Didnt have Tamari so I use soy and add coconut sugar to cut the salty taste of the soy sauce. I love it. Receipt is really enough for 3 servings
