I was asked to create more simple and delicious recipes, so here is one of my favourites!
All you have to do is a grab a nice plump chicken, cut out the back bone, pat it dry, season it with 2 teaspoons of salt, 2 teaspoons garlic powder, 1 tsp paprika and 1 tsp dried thyme. Let it sit, a minimum of 15 mins in the fridge, uncovered, up to a couple of hours to dry the skin even more.
Bring your oven up to maximum temperature. Right before putting in the chicken bring it down to 180c. Place the chicken inside, on a drip tray, for about 60 mins. You know its cooked when you cut into it and there is no more blood, or when it reaches an internal temperature of 75c.
