Easy Chinese recipes – How to make Chicken and Mushrooms

Chicken and mushrooms is another classic Chinese restaurant dish that with a little guidance, is really simple to make.
Tasty and light, this dish does not rely on being overly sweet or spicy. Chicken and mushrooms should always be flavoursome but in a subtle and delicious way.
This dish contains classic and mouthwatering aromatics like garlic, ginger, soy sauce and sesame oil, creating a multi-layered yet light sauce. The chicken and the mushrooms are coated in and absorb all this wonderful flavour and the whole dish is just beautifully balanced.

No wonder chicken and mushroom is one of the most ordered dish on Chinese restaurant menus.

For 2 people you will need

1 large chicken breast fillet
5 medium-large mushrooms
1/2 a white onion
3 cloves of garlic
1 inch of fresh ginger
1 tsp of sesame oil
2 tsps sugar
2 tbsp of light soy sauce
1 tbsp rice wine (dry white wine out sherry will be fine)
A good pinch of salt and pepper
200ml water
1 tbsp of cornflour/cornstarch mixed with equal amount of water for thickening
2 finely chopped spring onions for garnish
