Important note: when you're using pickles in a dish, note that pickle flavour can vary WILDLY between brands and even between batches. It's probably better to just put together the taste you want from spices and lime juice etc, for a more consistent, reliable, less risky result.

No one in India makes fish curry like that!! If anything, that is complete wrong usage of ingredients. Indian pickles are used as a super small side to a mild rice-dal combination. Never ever use it to cook a curry!

Only half of Patak korma paste ingredients are used in a fish curry – coconut (not desiccated always has to be fresh ground), ginger-garlic, red chilli, turmeric and coriander seeds.

Just because it comes from a renowned chef, doesn't make it authentic. It can be superbly tasty but definitely, not Indian.

Instead of using the spices in the jars, make your own paste using the natural ingredients. Cumin, turmeric, ground cloves, garam masala all mixed into 3 tablespoon of yoghurt.

Any alternatives for the lime pickle? I found it was to sour and overpowering. Will try again with a lot less of it just just wondering if anyone has an alternative

Pataks curry pastes taste excellent but unfortunately can cause bad reflux and indigestion. Where as making a curry powder by toasting and grinding the herbs and spices does not cause indigestion.

As much as I like what you make, really sorry to say that pickles aren't to be added to curries.. It's more like a side..
Theres a chance the Coconut milk may curdle due to the tart lime..
Besides, any curry with freshly used ingredients would taste better..
