STIR FRY QUINOA WITH VEGETABLES

Ingredients:
Quinoa : 1 cup
Water : 2 cup

For Sauce:
Soy sauce : 1/4 cup
Brown sugar : 2 Tsp
Sesame Seeds : 1 Tbs
Peanut Butter : 2 Tbs
Chopped Garlic : 3 Cloves

For Stir Fry:
Chopped scallions: 1/2 cup
Chopped Garlic : 3 cloves
Oil : 1/2 Tbs
peas: 1 cup
pistachio : 1/2 cup
Pineapple chopped : 1/2 cup

Instructions:
Place quinoa in a small saucepan with 2 cup water bring to a boil, then reduce heat to low. Cover and cook until quinoa absorbs water, about 15 minutes. Remove from heat, fluff with a fork and leave uncovered.
For sauce add all ingredients and mix well, set aside.
For frying heat oil in a large skillet over medium high heat. Cook chopped garlic and scallions , stirring occasionally, until it softens, about 1 minute. Add peas and fry for 1 minute now add cooked quinoa and sauce which we prepared before .Cook for about 2 minutes. Sprinkle with salt and cook, stirring frequently, 1 minute. Now add pineapple and pistachio and mix.Garnish with scallions , sesame seeds and sauce. Serve warm.
