Hola and Happy Cinco de Mayo my Friends, hope all of you are doing well, staying Safe and Healthy!

Todayโ€™s Recipe I am making Simple and Easy Chicken Empanadas!

Baked Turnovers that is just mouth watering delicious; it is full of flavor with chicken and lots of cheese! This Empanadas will be a great Recipe for a beginner Cook and great to make with Kids. Great to serve for an appetizer or main course!

3 cups cooked, diced chicken breast or thighs
1 (8 oz) bag shredded mexican blend cheese
4 oz (half of 8 oz) carton cream cheese spread, softened
1/4 cup diced red bell pepper (or any color)
1 jalapeรฑo pepper, diced and seeds removed
1 tbsp ground cumin
1 1/2 tsp kosher salt
1/2 tsp white or black pepper
2 (12 oz) cans original or buttermilk biscuits
Water
1 or 2 large eggs, lightly beaten

Preheat Oven to 400 Degrees

Place biscuits onto a floured surface and roll them about 1/4-1/2 inch thick using a rolling pin. Set aside.

In a large bowl, add diced chicken, cheese, cream cheese spread, bell pepper, jalapeรฑo, and seasonings; mix everything until well combined. Place the dough onto a floured surface, add 1-2 heaping teaspoons of the chicken mixture, then lightly brush the edge of the dough with water. Fold the dough over the filling, pressing the edges with a fork to seal. Place the empanadas onto a 9×13 inch baking pan lined with aluminum foil and spray the foil with cooking spray. Brush the empanadas on top with eggs. Bake for 15-20 minutes until golden brown. Remove from oven and cool on a wire rack for 3-5 minutes. Place empanadas onto a platter, serve with your favorite dipping sauce and enjoy!
