I am making a Spanish Appetizer, Patatas Bravas (Fried Potatoes with Homemade Bravas Sauce) it is so crispy on the outside and tender in the inside and fried to golden perfection; and a Bravas Sauce that is out of this world delicious!

Cook’s Note: For the Sauce, remove olive oil from stove if the pans starts to smoke.
4 medium Idaho potatoes, peeled, washed, and cut into chunks
1 1/2 cups extra virgin olive oil, for frying
1/3 cup extra virgin olive oil
1 tsp smoked spanish paprika
1 tsp paprika
1 tbsp all purpose flour
1 cup vegetable broth
Salt, to taste
For the Bravas Sauce
Heat a skillet over medium heat and add olive oil. Remove from heat and add both paprikas and stir until well combined and turned into a paste. Then add flour and stir until well incorporated. Add vegetable broth a little at a time and stir until reaches a desired consistency. Season with salt to taste and place it back on the stove and keep warm.
For the Potatoes
Add olive oil in a large skillet over medium heat, add potatoes and reduce the oil to low heat. Pre cook the potatoes for a few minutes. Place potatoes onto paper towels or wire rack to drain access oil then place them in the refrigerator to cool. Heat the oil back up to medium heat then add potatoes and fry until golden brown (about 8 minutes or depends on how crispy you like your potatoes). Remove potatoes from oil and place them on paper towels or wire rack to drain access oil. Drizzle with the Bravas Sauce and enjoy!
