Vegan Toaster Quesadillas + Sauce Rexipet: (more helpful tips + answered a lot of questions about tortilla size and type in this post too)

How to Make a Vegan Pizookie

I used a store bought cookie mix from Trader Joes and just subbed vegan butter and used 1/4 cup of unsweetened applesauce for the eggs.

You can do this with any cookie mix that doesn’t contain dairy or eggs, just sub a vegan butter or vegetable oil for the amount called for on the box. And use applesauce or 1 flax egg per recommended egg.

Applesauce works well for blondies since it’s more of a batter than a dough (like brownies) And a flax egg works better if you want a sturdier cookie shape :)

Flax Egg Recipe:

Mix 1 tbsp of ground flax seeds with two tbsp of water in a small bowl. Let it sit for 15 minutes to thicken then use it like you would use an egg in the recipe.

Pizookie Tip: under bake the cookie a little so the center is gooey! Top with ice cream and serve warm!

Disclaimer: I didn’t invent toaster quesadillas! They’ve been an internet trend for a while and I believe it was invented by @skemily on TikTok. I learned a lot from this helpful video and in my video, I relayed some of what I learned from it and other viral videos and added to it by offering my tips based on my experience of making the recipe at home many times. Also shared the ingredients I used to veganize it! More info in the blog post above, but I highly recommend VioLife Mature Cheddar Cheese and the others linked in the post. This video was about sharing a method more than an original recipe, so gotta give credit where credit’s due :)

Hope you enjoy these Family + Kid Friendly Vegan Recipes! It was really fun to show you how to make skillet cookie vegan and testing/veganizing Tik Tok’s toaster quesadillas was a fun challenge! Let me know if you want more videos like this in the comments!

Happy cooking!
