All 4 cookies are made with the same ingredients – the amazing thing is that by changing the amounts of just a few ingredients (flour, sugar, baking powder) makes 4 totally different cookies!

1 cup butter softened
2/3 cup granulated sugar
3/4 cup packed light brown sugar
1 1/2 teaspoon vanilla extract
2 lrg eggs
2 1/3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups chocolate chips
preheat oven to 350° F.
Beat butter, granulated sugar and brown sugar until creamy
Add the eggs and vanilla extract and beat until smooth
Add the dry ingredients and beat until combined (scrap the sides if needed)
Stir in the chocolate chips.
Using a medium cookie scoop place dough balls on a cookie sheet with parchment paper.
add extra chips to the top
bake 8-9 mins

1 C butter
1 C sugar
1 C brown sugar
2 eggs
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
3 1/4 C flour
1 1/2 C chocolate chips
Preheat to 375
Cream the butter and both sugars until light and fluffy
Add the eggs and vanilla and beat until smooth
Add the dry ingredients and beat until just incorporated
Stir in the chocolate chips
Bake 8-9 mins

1 C granulated sugar
1 C packed light brown sugar
1 C butter softened
2 eggs
2-3 tsp vanilla
3 C oatmeal
2 C all-purpose flour
1 tsp baking soda
1 1/4 tsp baking powder
1/2 tsp salt
12 oz Chocolate chips
8 oz macadamia nuts optional – wash and dry before adding
Preheat oven to 360.
In a food processor or blender grind the oats from 3 cups down to 2
In a bowl whisk the oats, flour, baking soda, baking powder and salt.
In your mixer with whisks beat the butter and both sugars until thick, light and creamy.
Add the eggs and vanilla and beat.
Switch from the whisks to the cookie paddles.
Add the dry ingredients and beat.
Then add the chocolate chips and nuts and mix.
using a medium cookie scoop scoop out balls of cookie dough – if you want chocolate chips showing add extra chips to the top of the dough balls
Bake for 8-9 mins – tip – when using a hot cookie sheet cut back by a min.

2 cups butter softened
1 1/2 cups light brown sugar
1 cup granulated sugar
4 large eggs
3 cups cake flour
3 cups all purpose flour
4 tsp baking powder
1 tsp kosher salt
2 cups roughly chopped pecans
3 cups semi sweet chocolate chips
preheat the oven to 400 degrees
beat the butter until creamy
add the sugars and beat until light and fluffy
add the eggs and beat until just incorporated
add the cake flour and beat together
add the all purpose flour, baking powder and salt, beat until totally incorporated
add the pecans and chocolate chips and pulse until mixed together, if you mixer struggles then fold together by hand
scoop out 3.10 – 3.15 oz of dough at a time, keep the dough balls rough
bake for 9 mins, the cookie edges will become golden
let cool at least 15 mins – I recommend closer to an hour for the center to set
