What I eat in a day no soy, gluten free, nut free vegan challenge! I hope this video gives you some easy meal ideas and meal prep inspiration! For breakfast on this day I made my Tropical Overnight Oats with Warm Pineapple sauce (recipe below) and for lunch I made a new version of my favorite vegan chicken salad recipe. Served it up in some red butter lettuce boats and had some dairy free sour cream and onion chips on the side. For dinner I made a hearty grain bowl with my favorite roasted veggie seasoning, and for dessert: 3 Ingredient Chocolate Nice Cream with DIY Magic Shell! So delicious! Let me know if you recreate these easy vegan meals at home! Can’t wait to hear what you think :)

Kelly Lyons says:

This was great, could you ever make one without fructose?

elisabeth bousdas says:

I would love if you did more soy free videos!!! Staerted eating free range eggs from a local farm once I found out about my allergy. My protein levels were very low.

Rachel Thies says:

Amazing video!!! Thank you so much!

Shelley Picott says:

Not soy-, gluten-, or nut-free here but can you share what to do when coconut and coconut milk is not an option?

Kathleen Kibblehouse says:

Can’t find the seasoning recipe for the veg. Searched your site and this one for the carrot soup you mentioned with no luck. Can you link it please? Sounds like a good one I’d like to keep on hand. thanks Nikki!

Kathleen Kibblehouse says:

You always amaze me Nikki – by keeping it fresh and new for everyone! HUGE fan!

Jessica Louise Inspiring Health says:

Hey nikki! Just wondering how many calories this would be roughly? Looks like you are eating lots of food but it's very calorie dilute.. I feel like this is would only maybe be 1500 calories? Definitely not enough! Please correct me if I'm wrong x

Leander T says:

Weirdly I was like….no soy, no gluten, not nuts…what would you even eat? But then I realised there's actually a lot of foods you could eat. Lol.

K P says:

I understand the idea of protein powders as being useful for those who are transitioning to a vegan diet, but I think they are ultimately a processed food and therefore less desirable. This focus on protein in vegan diets to me is strange to me, but I went vegan 21 years ago.

Sheelie Kittie says:

Nikki, this video is perfect! I've allergies to nuts and soy, so this helped me tremendously thank you so much – You think of everything! It is so kind and thoughtful of you to think of those with food allergies and still motivate to be vegan. PS you're sooo pretty! Curious to know what is your ethnic background?

Michelle says:

Wow. Just made the chickpea salad and had to stop myself from devouring the entire bowl. SO GOOD. Nikki you are a talent!! So glad I found your channel. You are making me and my husband happy vegan foodies! Please keep them coming.

L CR says:

I made the tropical oats. Wow ☺️👍🏻 they’re good!

Tammy Tammy says:

Hey Nikki. I love your ideas. Can you do a Banana-free and Avocado-free what-i-eat-in-a-day video? Thanks!

Carine says:

Za’atar is so yummy! I am impressed, your dishes are very colourful and look delicious! Thank you for sharing.
Nuts and tofu are often used for vegan cheese sauces so my favourite soy-free/nut-free things to make are the potatoes and carrots cheese sauce and the cauliflower Alfredo sauce. Connie’s RAWsome Kitchen has interesting aged cheese recipes using potatoes and rice instead of cashews. As for replacing soy, I know it is possible to make tempeh from chickpeas or lentils, haven’t tried yet…
My favorite flatbreads are quinoa flatbread and red lentils flatbreads, both gluten-free and delicious.

C D says:

It all looked really good but I am making the veggie bowl tomorrow! Probably the banana nice cream too.

Catherine Beavers says:

Can I use almond milk for the oatmeal?

Ottó Ungvári says:

I don't believe in overnight oats! I mean, that the whole idea is bad. Oats have to be cooked, preferably in water

Castledark Dweller says:

loved your recipes in this vid mate! especially that pineapple sauce!
i tripled your listed ingreds, added a good scoop of chia seeds, and blended it all at the end so its a pureed sweet fruit conserve!
LORDY its divine! ive had it on nice cream, crackers, hot toast, porridge, some really tart strawberries and even as a topping on my unfried rice!
(here in Australia theres no pineapple jam to be bought anywhere! no idea why but ive been hanging out for it for YEARS, so this REALLY hit the spot!) A biggggg thankyouuuuuu to you LovelyGirl xox
