How to Make Deliciously Creamy Carrot Soup

❓What if I don’t have shallots❓

This recipe calls for shallots in addition to a regular white onion. Shallots are a smaller member of the onion family that have a sweeter and more mild taste. If you don’t have access to shallots, or simply don’t want to buy them, you can always leave them out, but they really do add a wonderful bit of flavor. You could always try using a sweet onion instead of the white onion as another option.



8 carrots peeled and chopped
2 shallots sliced
1 white onion diced
1/2 tsp salt or to taste
8 cloves garlic sliced
2 tsp Thai red curry paste
4 tablespoons butter
1 cup heavy cream
6 cups vegetable broth


1. In a large saucepan, melt the butter over medium heat. Add in the shallots and onions and saute for about 5 to 7 minutes. Season with a little salt. Add in the garlic and thai red curry paste and saute for just another minute or two to allow the flavors to be released.

2. Add in the carrots and vegetable broth and bring to a boil. Reduce heat and simmer until the carrots are soft, about 20 minutes.

3. Use a hand blender to puree the soup, or puree in batches in a food processor or blender. After the soup has been pureed, return to a low heat and add in the heavy cream. Taste and add salt if necessary. Hold soup warm to serve.

I would use homemade vegetable broth in this soup, but I've never been able to find the vegetable bones and meat used to make a broth.

If you don’t want cream you can put cashew cream ( soak 5-6 cashew in warm water for about 30 min and purée it with the rest of the soup ) . It gives the same richness with much less fat .

I made this soup today the only difference I added 1 more teaspoon of red curry paste it is absolutely amazing my wife loves it too super good thank you for the recipe! And for the record I like carrots I do not love them …I do love this soup

I just finished making it and I turned out so good!! I really recommend making this. I tasted the soup before I added the cream and it tasted a bit better but it also is really good with the cream!

Ur carrot soup is amazing.. while cooking it smelled really weird so I was very sceptical to try it (I think it was the Thai curry spice ) but I m so glad I did.. it really wonderful
