Geez what's with all these RoL recipes heavily dosing with salt and olive oil…..  I'd rather use more herbs than salt and lamb is high in fat so if one lightly sprays the pan/grill and in the marinade use only a couple table spoons.     Salt and oil makes everything taste devine, but it also will drown out the true flavor of the lamb – especially if you have organically free-range lamb

Most US meat is hormone fed fast-growth crap. No wonder it doesn't have any flavor – the muscles haven't done any work! Garlic, lemon, 'erbs might help but basically you are working with spam. Support local farmers and buy what you know.
