Hey man, i just want to thank you. i did a brisket last week and i fucked it up (my girls were pretty disappointed) i watched your video (smoking 101 i think) the next day and knew were i FUCKED up. i tried it again today with some rib and it was perfect, thank you for sharing your pit master skills, you're the best.

BJ, Boy pay attention when I talking to you.Have you ever used lump charcoal for a brisket? I enjoy your videos greatly.Moved from Texas to Missouri.Going to purchase a smoker, just not sure weather it will be a vertical or horizontal. I had a Brinkman Smoking Pit for over 12 years and had wonderful results. It finally rusted out beyond repair.Still undecided.Take care sir, ken in Missouri.

Hey JB, I just bought a new cookbook by the great pit master Aaron Franklin, and he recommends a all round smoking temp of 275 for all meat he smokes. I was I bit surprised by the higher temperature, so do you think that's a good all around temp for all meats or is it to high? I respect your opinion JB, your the one who taught me how to smoke on my weber smoky mountain! Thanks JB.

I have three BBQ channels worth subscribing to – BBQ Pit Boys, Malcom Reed, and Louisiana Cajun Recipes.  LCR takes a heck of a long time to get to points, but if you listen to him talk, you're bound to pick up a lot of tips and tricks and information.

Smoking our first beef brisket on our WSM hoping it turns out looking as amazing as yours. Today is a a chilly day though around sixty degrees and were having a little bit of a hard time getting to temperature. (we've never smoke anything in it before so we did put water in the water pain since you have said our first time it would run hot) Any suggestions or thoughts??
