Okay D.I.Y.errs, I’m gonna do my best with these measurements. I normally DON’T measure anything but water for rice…LMBO!
No Meat Collards Recipe
1 Bunch of collards
2 Cups of water
1 1/2 Tablespoon of pink himalayan salt and pepper
1/2 cup of extra virgin olive oil
1 bottle of liquid smoke
Jackfruit Pot Roast
1 can of jackfruit or fresh if available
2 Tablespoons of liquid smoke
2 Tablespoons of steak seasoning
1 Tablespoon All spice
1 Tablespoon minced garlic
1 1/2 oz of A1 Steak sauce
1 Tablespoon of Kitchen Bouquet
2 Tablespoons of olive oil
3 chopped carrots
8 to 12 smaller potatoes *Add celery if you like it. I don’t.
1/2 yellow onion
1 small shallot
2 cubes of your fav vegetable stock boyan cube
Marinate jackfruit for 30 minutes to an hour *Best overnight
Add content to a cast iron skillet. Mix 1 cup of vegetable stock to the skillet and place in the oven on 350 degrees. Once the jackfruit and vegetables are cooking for about 10 minutes. Add 1 table spoon of cornstarch to 1/2 cup of hot water and mix well. I added an extra tablespoon of Kitchen Bouquet for color. Cook until potatoes and carrots are tender.
Dairy Free Mac-n-Cheese
1 Cup of cashews *boil cashews in vegetable stock for more flavor. Add onions.
1 Cup of vegan cheddar and mozzarella
1 Cup coconut milk
2 Tablespoons of vegan butter
1 Tablespoon of smoked paprika
2 Tablespoons of Grey Poupon Mustard or a little more
Cook the cheese sauce and add it back to the blender. Don’t be lazy like me. *Bake at 350 till golden brown, Move it to the top rack to brown on top as well.
