Made the “creamed spinach” yesterday and it was so good!! I cooked the bacon first, drained some of the oil, then cooked the mushrooms and onions. I didn’t have coconut cream, only coconut milk and I forgot the garlic and it was still fantastic! Not as heavy as it is with all the cream. Will make it again this weekend.

I have a quick question I do not like coconut flavored anything. I love the coconut smell but I can not eat anything that has coconut in it. Is there another option? Other than using milk. Maybe almond milk? No clue. I'm not one that knows how to put ingredients together to make it taste good. That's why I watch you! :-)

I am a little confused. I thought the ratio of fat to protein needed to be higher. Cause to much protein at 1 sitting can knock you out of ketosis.
