Try a silicone baking mat. You can use these to line your pans to bake anything in the oven. You never need to spray your baking sheets again! They are life changing – you can use for anything you would heat on a baking sheet or sheet pan.

I usually cool cookies on wire racks (slows things down, but works well for me…). They look delicious!
If you use parchment paper or a Silicon liner you don't have to grease the cookie pans. Just slid them right off.
