2 medium courgettes
6/7 medium mushrooms
4 spring onions (use green bits too!! They have loads of flavour)
thumb of fresh ginger
handful of fresh coriander
1 tbsp rice wine vinegar
1 tbsp soy sauce
1 tbsp sesame oil

4 peppers
olive oil
2 cans of butterbeans or 800g freshly cooked
2 garlic cloves
1 tbsp tahini
1/2 lemon juiced

Roasted potatoes cubed for the hummus

800g Firm Tofu
1 tbsp coconut oil
4 small onions
12 garlic cloves
3 tbsp chopped ginger
6 tbsp light soy sauce
4 tbsp dark soy sauce
2 tbsp caster sugar
5 tbsp coarsely ground black pepper
16 small spring onions cut into 3cm pieces

1 head of lettuce
1 large courgette
1 large cucumber
4 small carrots
1 red pepper
(Any other veggies you love!!)

2 tbsp peanut butter
1 tbsp rice wine vinegar
2 tbsp soy sauce
1 tsp fresh ginger
optional 1 fresh chilli
water to make it as runny as you like (start with 1 tbsp and keep going).

Optional: add baked tofu / tempeh / beans / some protein!

Great video as always. You have such a talent for the aesthetics. I just wonder why you’re vegan? If the emphasis is on sustainability isn’t t better to get an all round diet on local organic produce that includes some animal products for protein and b12? (Assuming you cant get enough protein from nuts and legumes local to the UK). My assumption is that local, seasonal & organic is much better than just vegan. Can you really eat fully vegan in the UK and also eat seasonal, local, sustainable..?
