Creamed spinach used to be one of my and my dad’s favorite holiday side dishes, but it was so full of dairy cream and cheese that I was always left feeling heavy. This version uses a garlic cashew cream sauce, and your guests will never know it’s free of dairy.

It's not dairy free if you are using Ghee!

But this is NOT dairy free at all! You are using ghee, which of course is dairy! If this is to be dairy free and vegan, you have to drop using ghee. I suggest you use dairy free margarine instead, there are super good options now, dairy is not needed!

Why did you throw all that nutrition out? Cook spinach in a little water, with lid, and don't pour the goodness down the drain.

Can you clarify your comment on ghee about the having the milk solids removed? Does it still have the whey?

So I just made this with a double bath of the sauce and a small portion of the spinach (just enough for me and my husband for lunch tomorrow) and threw some pre-made pesto into the other half with some zoodles and peas for a pesto-alfredo. OMG I'm never making a sauce again without that being the base. I've missed cheesy thick sauces like alfredo for so long having Crohn's and this is seriously the best base for that. Thank you so much!!! The creamed spinach was awesome too!
