Crispy Tacos dorados filled with flavorful beans and cheese! Today I’m going to be using a can of beans to prepare a quick and easy pobresita (poor baby/ struggle meal) style recipe. I’ll show you how to transform your bland canned beans into a gourmet flavor that will have your family saying Oh, yeah! All ingredients used are simple and found in most homes. Ingredients
Oil (canola)
1 dozen white corn tortillas (Guerrero)
1 can pinto beans
1 cup cheese (Mexican cheese blend & Freshly grated cheddar cheese)
1/2 jalapeño or Serrano
1/4 chopped white onion
Salt to taste

Easy salsa
2 boiled tomatoes
1/2 jalapeño
1 Tbs lemon juice
1 Tsp oregano
Salt to taste
add all ingredients to your blender and blend till smooth

Optional toppings- Finely chopped cabbage or lettuce

Do you know how to make empanadas with pumpkin? My mom used to make those every year in the fall. I never did learn how to make the masa for that, but I remember it was slightly sweet

I have what I call a Mexican potato salad that I sort of came up with how can I share it with you guys pictures and the recipe and then I would like to see your take on it cuz I know your come up with something to help me expand it. By the way I noticed the Cardenas grocery bags in the background sometimes I live in Palm Desert so I know I have access to a lot of the material you use. I'm still debating on whether I want to turn it red or I want to turn it green or can I do a little bit of both little hint I use chili powder which turns it red believe me there's more secret ingredients but I also garnish it with cilantro which separates it from any normal potato salad I was thinking to maybe make a cilantro aioli or cilantro cream you know I mean I want to make some cream and mayonnaise in the bullet with cilantro but then how will the color be when I add the chili powder
