You’re going to see how easy it is to make your own Chinese Crispy Pork Belly 脆皮燒肉 and Red Braised Pork Belly 紅燒肉 that comes out looking just like our video showed.

Chef John shares the two secrets to perfect crispy pork belly:

1. Pricking lots of holes in the skin = puffy crackling with bubbles. This is what makes all the difference, yielding that beautiful bubbly crackling that is so unique to Chinese pork belly.

2. Roast covered in rock salt = crispy crackling.
Salt draws moisture to the surface, helping to guarantee you’ll get crispy crackling every single time.

Shanghai-Style Braised Pork Belly (hong shao rou, 紅燒肉), or “red braised pork,” may be one of the most common of all Chinese dishes, but it is also one of the most glorious, a slow stew of belly pork with seasonings that include sugar, soy sauce, Shaoxing wine and spices.
