If I could give this 100 thumbs up I would. I have a piece of meat just like that sitting on my counter ready to go, and I have absolutely everything except for the scotch bonnet because mine are not ripe yet. So I’m going to use a mixture of habanero’s and starfish peppers. I will definitely update to let you know once I’m done cooking tonight :-)

145 and rest to 150 is best for tough or lean pork! Shoulder 250 for 4-6 hours to 186 or so to pull or 50 minutes in Insta pot! with 15 minutes in pot to rest.

Sounds to me like you Over cooked it and it came out Dry. Is that why after you sliced it,you put a tablespoon or two of the gravy on top and let it drip down on the slice? Need me to tell ya where you went wrong? You left the oven on 400 degrees after the first 45 minutes to an hour. Try turning the oven temp down to 300 for an additional 3-4 hours depending on the size of the roast. If you don't have 3-4 hours,turn it down to 325 for about 2 more hours and continue testing it with a meat thermometer. Internal temp should be ATLEAST 195-205. I know,because I HATE over Cooked DRY pork.

my mom used to bore holes in the meat and stuff the seasoning down inside of the holes. I found that it was really dry when she did that. Do you recommend boring holes and stuffing the seasonings down into the holes or just having the meat soak in the marinade? I want flavor throughout!
