Todays video is a weight loss meal prep! These are all easy, low carb recipes that are all super delicious! I have a breakfast egg cup meal prep, a protein packed tuna salad meal prep, my broccoli picnic salad meal prep, and I’m also prepping some Zoodles and some baby peppers. My weeks are a blur now-adays and I’m sure you all can relate. Having some ready-made meals in the fridge helps me to slow down and enjoy my meal times. I am currently on a weight loss journey down 33 lbs with 23 left until I reach my goal weight. Meal prepping is KEY to staying on track for me.

There’s another YouTuber named Simply Misti and she does her tuna salad just like that too with the egg except she’ll also add diced fresh jalapeño and does half mayo and half sour cream. It’s so good! I had never heard of putting egg in tuna salad until I seen her video and now you too! I guess it’s more common than I thought.

It's important that our food tastes good, or we won't enjoy it, and we may fall off the wagon. Variety is important too. I keep it simple. That is my key. Struggling with what to eat each meal is not fun, so keep at least one or two meals a day standard with some variations in it. For breakfast I love my turkey bacon with scrambled eggs with chopped green pepper, onions, cheese, and tomatoes on top. Lunch is usually a salad with cheese, leftover veggies, leftover meats/chicken, seeds/nuts, or any combination of those. Dinner is whatever I feel like, as I am on a plan called the Carbohydrates Addicts Diet. That means dinner is anything I still need, such as fruit, whole grain bread, potato, milk, etc. Most of my dinner is still low carb, with vegetables and a protein. I put leftovers back in the fridge which helps for the next day, and I don't have to plan. She is cooking ahead in this video, and that helps too. Congratulations on your weight loss.

Such good ideas! I made the egg cups this morning and they turned out great (except not as pretty as yours. LOL) I love that you can use what ever you have on hand. I did broccoli, cheese and tomato in six and deli meat and cheese in the other six. I didn't have bacon on hand, so I improvised. I can see using bacon, sausage, onion, bell pepper, etc. From my Denise Austin days years ago, I remember a recipe that used a spoon full of salsa in an omelet. I'm thinking that might be good in the egg cups as well. Thanks!
