Zeppole for Christmas: Italian Recipes – Cooking with Nonna Lucia

Welcome to Nonna Lucia’s Christmas Edition ❤

In today’s segment Nonna shows us how to make a special Xmas treat. This one takes a little bit of time to prepare and make but is a favourite of many :)

Ignore the very un elegant taste testing at the end lol..It’s a tough job but someone has to do it!

Nonna’s Lucia’s Zeppole Recipe:

Ricotta + Rice – 1/2 cup of long grain rice
1 whole lemon rind (juice if desired)
4 eggs
1/2kg ricotta
1/2 cup of sugar
1Tbs of vanilla sugar or vanilla essence
Combine all ingredients and set aside.

Yeast – 5 tsps of yeast, a pinch of sugar
2 cups of warm water – combine and let sit covered with cling wrap for 10mins until risen.

Dough – 6 cups of flour
11/2 Tbs salt
1Tbs vegetable oil
3 cups of water – mix until all combined – make a well in the middle, then add yeast when ready and mix.

Cover with cling wrap + towel for 1/2hr to 1hr depending on the weather and temperature of the room.

Once risen coat with a little bit of oil.

Roll out with rolling pin – not to thin, not to thick.

Cut out with small pastry cutter – add desired filling (mine is clearly Nutella, closely followed by mozzarella) and seal well.

Heat pan with vegetable oil – shallow deep fry till golden brown – wait to cool slightly so you don’t burn your tongue on the filling and enjoy! :)

If desired you can coat the nutella or plain ones with oil and or sugar.

Plate up and enjoy! :) Bon appetit!

yes Lucia, this is done for Christmas eve Lunch, everyone gathers and starts the festivities at this time and it just keeps going until after we eat at night. Its still a huge deal for us as I am first gen still so my parents are still right from old country and there is no other way. LOL Bone Natale
