This isn't a healthy soup. There wasn't any need to add potatoes in the soup. Puried Carrot is very dense.

If you need to add another vegetable along with the carrot, you could have added sweet potato/kumara or even parsnip is great and tastes amazing.

I regularly make carrot soup during winters in Auckland. I make it with carrot and parsnip along with half a cup of coconut milk if required.
