What I eat in a day no soy, gluten free, nut free vegan challenge! I hope this video gives you some easy meal ideas and meal prep inspiration! For breakfast on this day I made my Tropical Overnight Oats with Warm Pineapple sauce (recipe below) and for lunch I made a new version of my favorite vegan chicken salad recipe. Served it up in some red butter lettuce boats and had some dairy free sour cream and onion chips on the side. For dinner I made a hearty grain bowl with my favorite roasted veggie seasoning, and for dessert: 3 Ingredient Chocolate Nice Cream with DIY Magic Shell! So delicious! I understand the idea of protein powders as being useful for those who are transitioning to a vegan diet, but I think they are ultimately a processed food and therefore less desirable. This focus on protein in vegan diets to me is strange to me, but I went vegan 21 years ago.

Za’atar is so yummy! I am impressed, your dishes are very colourful and look delicious! Thank you for sharing.
Nuts and tofu are often used for vegan cheese sauces so my favourite soy-free/nut-free things to make are the potatoes and carrots cheese sauce and the cauliflower Alfredo sauce. Connie’s RAWsome Kitchen has interesting aged cheese recipes using potatoes and rice instead of cashews. As for replacing soy, I know it is possible to make tempeh from chickpeas or lentils, haven’t tried yet…
My favorite flatbreads are quinoa flatbread and red lentils flatbreads, both gluten-free and delicious.

i tripled your listed ingreds, added a good scoop of chia seeds, and blended it all at the end so its a pureed sweet fruit conserve!
LORDY its divine! ive had it on nice cream, crackers, hot toast, porridge, some really tart strawberries and even as a topping on my unfried rice!
