I tested cookie recipes from the new york times for the holiday. This is the second part of the DIY cookie boxes I am making for family and friends. In this video I tried making malt chocolate marshmallow sandwich cookies and chocolate peppermint shortbread. These were so much fun to make I hope you give them a try!

Malt Hot Chocolate Cookie Recipe (this is half of what I made in the video above 16-18 cookies)

Malt Cookie:
2 cups (255 g) all-purpose flour
½ cup (45 g) malted chocolate powder, such as Ovaltine
¼ teaspoon baking powder
¾ cup (170 g) unsalted butter, room temp
½ cup (110 g) dark brown sugar
1 tablespoon honey
½ teaspoon kosher salt
2 tablespoons heavy whipping cream

Chocolate Ganache:
4 ounces (115 g) dark chocolate, chopped in small pieces
½ cup plus 2 tablespoons (150 mL) heavy whipping cream (35%)
Flaky sea salt (optional topping)

½ cup/100 grams granulated sugar
¼ cup/60 milliliters honey
¼ teaspoon kosher salt
1 ½ teaspoons powdered gelatine
1/2 cup water (split in 2 parts)

Peppermint Chocolate Shortbread:

Chocolate cookie:
1 cup butter, room temperature
1/2 cup granulated sugar
1/2 teaspoon coarse sea salt
1/2 cup unsweetened cocoa powder
1 1/2 cups all purpose flour
1/3 cup mini chocolate chips

Swiss Meringue:
4 egg whites
170g sugar
1 teaspoon peppermint extract
Red Food Dye
