PORK ESTOFADO or ESTOFADONG BABOY is a type of Filipino Pork stew dish. It is made with pork belly marinated in soy sauce, vinegar, garlic, and ground pepper. Pork bellies were slow-cooked until very tender in marinade sauce, simmered in pineapple juice to add sweetness. It is similar to pork humba and pork adobo, however, it’s way sweeter compare with pork adobo.
Serve it hot with freshly cooked white rice.
