Those nachos looked so good, i'm curious if the sweet potato would get crispy if you sliced it super thin on a mandolin and then fried it in a good quality oil hmm.

If you use a mandolin you can get potstos and sweet potatos crispy with no oil at all, I do it daily. Same with corn tortillas I get them crispy with no oil

Here's a quick recipe for avocado (from France): cut them in two lengthwise, remove the stone, scoop a spoonful (tea or table, according to taste) of Dijon mustard in the hole… and enjoy! It's not a meal on its own, but it's good as a starter, while the main meal is still cooking!
I notice you do not peel your sweet potatoes, and you do not peel your eggplants (or, presumably, your zucchinis) either. I've always been told to peel mine : some of my relatives are farmers, and they were horrified at the increased use of pesticides. I can seldom afford to buy organic, and of course I can't peel kale or berries, so I try and peel as many of the fruit and veggies I eat as possible, hoping the phytonutrients and whatever pesticides I ingest will average themselves out. I'm in the EU (UK, probably moving back to the continent in a couple of years' time) right now.

Breakfast! I just got allergy results in and I am allergic to gluten and eggs (many other things) which makes breakfast so hard. I like variation and I have been getting real tired of smoothies and acai bowls.
